Baby Weaning Pancakes

Whether you’re celebrating Pancake Day or just want to mix things up at breakfast time, pancakes are a great option for your baby.

While you might not want to fill them with the sugar and lemon covered pancakes we’re used to quite yet, there are loads of great options full of fruit and whole grains.
Make sure you cut them into small pieces and have lots of water at the ready as pancakes can be a little dry. Why not serve with their favourite fruit?

If you have a toddler, this is a great opportunity to get them involved. Let them get you things from the cupboard and weigh out the flour. You can even practice counting as you flip over each pancake.

Two Ingredient Banana Pancakes (myfussyeater.com)

These pancakes are made from just two ingredients and are both gluten, dairy and sugar free. They are extremely simple and are very soft, so perfect for baby led weaning.
This recipe makes roughly 10 pancakes, which is enough for 2 servings.

Prep: 2 mins
Cook: 5 mins

INGREDIENTS

  • 1 ripe banana (when it’s ripe, it’s extra sweet so there is no need for sugar)

  • 1 egg

  • butter or coconut oil for frying

METHOD

  1. Mash the banana. In a separate bowl beat the egg with a fork. Add the banana and mix until well combined.

  2. Heat a little butter or coconut oil in a frying pan over a medium heat. Add one tablespoon of the mixture to make each pancake. It will depend on the size of your frying pan but you should be able to cook 5 pancakes at a time.

  3. Fry for approximately 2 minutes on either side or until the pancakes start to brown.

  4. Serve immediately with some chopped fresh fruit.

Apple Sauce Pancakes (yummytoddlerfood.com)

These pancakes are extra fluffy and tender so perfect for babies. Just cut them into little pieces and give them lots of water between mouthfuls. If they’re a little dry, try spreading apple sauce on top before cutting them up.
This recipe roughly serves 4.

Prep: 5 mins
Cook: 15 mins

INGREDIENTS

  • • 1 cup buckwheat flour (or whole wheat flour)

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1 cup unsweetened applesauce

  • 2 eggs, lightly beaten

  • 1/2 cup milk (dairy or nondairy)

  • 1 teaspoon vanilla

METHOD

  1. Stir together all ingredients in a medium bowl. Heat a cast iron or nonstick skillet or griddle over medium heat. Coat with neutral oil, butter, or nonstick spray.

  2. Spoon out 1/4 cup of the batter at a time—or less to make smaller pancakes—and spread to an even thickness about 1/4-inch thick. Let cook about 3-4 minutes OR until the edges are totally set and bubbles start to appear. You want the pancakes to be mostly cooked before you flip them. (The first batch may take longer to cook as the pan heats up.)

  3. Carefully flip and cook for another 2-3 minutes.

  4. Serve immediately and repeat with the rest of the batter, or keep warm on a baking sheet in a 200 degree F oven.

Toddler Pancakes (theworktop.com)

This recipe makes 5 dozen toddler pancakes! They are easy to freeze and a few seconds in the microwave and you’ll have a pancake ready to go as soon as they are demanded in the days to follow.
They are made with whole grains, egg and milk with no added sugar.

Cook: 15 mins

INGREDIENTS

  • 1 medium egg

  • 1 cup whole milk

  • 1 cup whole wheat flour (or a mix of all-purpose, whole wheat, golden wheat, and/or spelt flour)

  • 1 teaspoon baking powder

  • 2 tablespoons unsalted butter - melted

METHOD

  • In a medium bowl, beat the egg. Mix in the whole milk. 

  • Mix in the flour and the baking powder, and If using, the optional add-ins.

  • Mix in the butter.

  • Heat a griddle to medium heat and lightly grease the pan. To make 1-inch pancakes (like in the photos), drop on the pancake batter using a teaspoon. To make 2-inch pancakes, drop on the pancake batter using a tablespoon.  

  • Cook, until the tops of the pancakes have bubbles on them, the batter is no longer shiny, and the bottom of the pancakes are a light golden brown, about 45 seconds to 1 minute. Flip and cook for an additional 45 seconds to 1 minute, until the bottoms are also golden brown. Remove from heat and set on a plate to cool. 

  • Serve with a dollop of plain greek yogurt and fresh berries.
